I have a Wine Saver at Home system and I need to know if I have to connect 3 bottles to make it work or if I can connect one or two at a time? Also, if so what do I do with the un-used stations? Do I connect the Tap Heads and Stems to the couplers or leave them empty?

I need assistance with the operation of my wine saver at home.
Can I preserve only one or two bottles at a time?
YES...
Although it is our recommendation to always have three bottles all attached to the gas quick connects at all times....
I always suggest to place a simple wine bottle full of water if you are not going to have three bottles of wine at once... The reason is both for the aesthetic value and also because that is the standard we have always used to evaluate the functionality of Wine Saver HOME...
If so, do I leave the other couplers empty or should I connect the tap heads and draw stems?
No ... if you connect the tap heads and their is no bottle of wine or water , you will instantly realize all the gas will be leaking out from the tap head.... it has to be installed in a bottle...

Can I connect a bottle that is half empty?
YES, but you will use that much more Argon gas.... if you consistently use full bottles of wine from beginning to end, you should get 12 plus bottles per canister of Argon Gas.... If you bottles that are only half full of wine, you will use excessive amounts of gas... The gas replaces the volume of air in the bottle...The more air, the more gas to replace it

Approx. how long will the wine last once connected?
Wine will stay "winery fresh" for at least two weeks, and depending on the stricture of the wine, some will keep for up to for weeks...
